VICTOR'S STEAK SANDWICHES
WHAT YOU'LL NEED
1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil
1 tablespoon spicy brown mustard
1 teaspoon honey
1 large garlic clove - minced
1 teaspoon salt
1 teaspoon pepper
MARINADE:
STEAK CAPRESE:
2 lbs B&C Flank Steak
2 cups cherry or grape tomatoes
1 cup fresh mozzarella (cubed) or mozzarella pearls
2-3 tablespoons fresh basil - chopped
1 teaspoon oregano
1 teaspoon garlic salt
DIRECTIONS:
For the marinade mix everything well and set aside.

Steak:

Marinate steak in 1/2 of the marinade overnight in the fridge

When ready to cook, shake off excess marinade and grill over med/high heat until desired temperature (usually 3-5 minutes per side) then remove from grill and set aside to rest

Caprese:

In a cast iron skillet cook the tomatoes with 1 tablespoon extra virgin olive oil for approximately 3-5 minutes until lightly blistered

Remove from heat and allow to cool

Mix with mozzarella, basil, and set aside marinade

Final Touches:

Thinly slice steak going against the grain.

Top with caprese mixture
